Ingredients: - 2 cups of cooked rice
- 415g can red/pink/smoked salmon (drained and flaked)
- 375ml can of light evaporated milk
- 2 eggs whisked
- 2tbls olive oil
- 1-2 tsp curry powder
- 1/2 cup grated reduced fat cheese
- Fresh herbs of choice (parsley, dill or oregano go well)
Step One: Pre-heat oven to 170 degrees celcius Step Two: Combine ingredients and pour into a pie dish or a 2L capacity baking dish. Step Three: Sprinkle over some extra cheese and herbs dipped in olive oil. Bake for 40 minutes. Team with a quick salad and dinner is served. Also great cold for lunch the next day! |
